cupcakes, corn and random musings …

139e I baked some cupcakes on Friday for our church’s Valentine’s Day Dance.  Red Velvet with cream cheese frosting.  The dance was for teens, and I think everyone had a great time.  And I’ve since gone on a bit of a baking bender – lots of cakes, truffles, and other goodies.  I spent a whole day in the kitchen and turned out lots of treats.  So I have happy kiddos and neighbors here this week.  I wish you were all close enough to share.  I think I need a second refrigerator!

I also made a tasty and fast little side dish that I wanted to share with you all.  Not the healthiest – I wouldn’t call it diet food – but not too bad and oh so yummy.  Take a tablespoon of canola oil and heat it until hot, but not smoking.  Add in a bag of frozen corn (since we have no fresh this time of year) and cook until tender (about 5 – 7 minutes, but it will depend on your pan, the size of the corn, etc).  Be careful of splashing from the oil.  Lower heat to medium.  Sprinkle with salt and pepper to taste, and add in 3 tablespoons of unsalted butter.  Stir until the butter melts and serve immediately.  Simple but so good.  Hope you guys like it!

Other than that, life has been moving along here – a birthday celebration for my grandmother, Valentine’s day with my sweeties, and some downtime looking at all your terrific blogs!

  3. Heaven in a cupcake if you ask me Stephanie! I love to follow sweet with savoury and your corn creations sounds healthier than a bag of chips. What do you think?

    Can I come hang out at your house while you carry on with your baking bender? Our house is very boring at the moment...all the good stuff has been cleaned out :( Your house is definitely more fun :)

  8. I have seen a lot of cupcakes but never one this pretty. It does not look real. More like a real rose. You are one amazing lady when it comes to baking. Sounds like you were busy but enjoying it.

  10. That is one gorgeous cupcake! Your frosting is beautiful. How do you do that? It looks like a flower.
    My cupcakes have frosting smeared on with a table knife. True works of art!
