Right now, it’s a gorgeous 73 degrees and sunny. This weekend, though, was in the 90’s. That’s pretty hot for the Northeast in May. So we made the first watermelon, tomato and feta salad of the year. YUM!
And then we broke out the tomato plants. Can you see those little babies starting already?
I can’t wait to make that salad again with my own homegrown tomatoes! Want to try it at home? It’s just cubes of watermelon cut into bite sized pieces, tomatoes, and feta cheese, plus your choice of basil or mint, cut into ribbons, and drizzle it all with just a little bit of the best quality Greek olive oil you can find. That’s it. Light, refreshing and delicious. It’s soooo good! Let me know if you try it.

Sounds really tasty! We finally had some good watermelon yesterday. Pretty soon people will be selling them out of their trucks on the side of the road!

Ohh your picture made me crave some watermelon yes they have it here but it's no where as sweet as it is in the states!! Enjoy some for me - hey did you finalize vaca plans yet?
