strawberry days …

A few posts ago, I promised to share some more summer favorites.  I served this delicious strawberry salad on Memorial Day.  It is always a crowd pleaser.  090

We had a nice sized crowd, with long tables laid end to end.  A simple table, twinkly lights, good food and good people make for happy days.

 I have to say, this is the first time I used plastic plates at a party, but I’m all for reusable dishes, promise! 

Now to get to the good stuff…

All you need is romaine lettuce, red onion, and lots of juicy red strawberries… yum …

I serve this with a poppy seed dressing:

Mix:

2 tablespoons of white vinegar,

2 teaspoons of poppy seeds,

1/2 cup of mayo,

1/4 cup of milk,

2 tbs sugar (or 1 tbs splenda, if you prefer, adjusted to taste)

For the very best taste, soak the red onion in the dressing for a couple of hours and dress the salad just before serving.

This salad makes a great summer side, but it’s also delicious with grilled or rotisserie chicken for a low/no cook meal that is light and satisfying.  Or for a meatless option, throw in some slivered almonds.   You really can’t go wrong with this one, and with strawberry season in full swing, it’s the best time of year to make this salad.

  7. That salad looks so delicious. The picture has my mouth watering for strawberries. I don't know about you but I can't seem to get enough of those wonderful berries...it's one of the best things about summer!

  10. Oh Stephanie, WHAT JOY HERE! The colors, the tastes, the SEASON! I am a teacher and school is out next week. What a year of a LONG WINTER and now I am going to ENJOY my dreams of my favorite part of the world: PROVENCE. Lavender and the BEST STRAWBERRIES I HAVE EVER TASTED will be on my mind.   15. Stephanie, I am so sorry I haven't visited in a while. Mid May things were very sad around here, then the blogger thing...lost half of my blog list, and my counter!
    I have been looking at your past posts. The cupcakes and cake look wonderful and I love the strawberry salad too.

    We were in Syosset yesterday for a Mass for our friend, 50 yrs a priest! It was beautiful.
    We haven't made it to one of the gkids, soccer, baseball or Lacrosse games, but next weekend will be Lily's dance recital, so we will be there!
    Hope your family is well, and we will get a date for you to come out for lunch soon!
    Right now I am waiting for the pollen to finish so I can get set up outside...it is awful this year!
